Miso Soup

Miso soup is a classic Japanese dish that can be made with many ingredients. This is a simple version that I like.

Ingredients

  • 1000ml or about 4 cups awase dashi
  • 3 tbsp miso
  • 4oz silken tofu
  • 2 green onion
  • 2 tbsp dried wakame seaweed

Other optional additions

  • daikon radish
  • clams
  • aburaage (fried tofu)
  • mushrooms, good options are shiitake or enoki
  • shrimp
  • udon noodles

Instructions

  1. Heat dashi to boiling and reduce heat to low.

  2. Ladle a cup of broth into a separate bowl. Whisk in the miso to this bowl until well incorporated.

  3. Add tofu, green onion, and wakame seaweed, and cook gently until warmed.

  4. Add the bowl of miso-dashi mixture into the pot and serve.
